WTF (Where’s the Food): Clutch Meal – Three Ways, Good Any Time of Day

At the end of your groceries and no chance to re-up before the next meal? Here’s an easy go-to that can work for any meal, uses basic ingredients, and can be tweaked to suit everyone in the house.

Ingredients:

  • Eggs
  • Bread of any kind – sliced, English muffin, tortilla, even a frozen waffle
  • Cheese
  • Butter/ olive oil or avocado oil
  • Optional: avocado, spinach, tomato, any veggies, Sriracha

How to:

Start by making a huge omelette – heat olive or avocado oil in a skillet over medium heat. If you have veggies, start by sautéing them until soft, then crack eggs. Cook for 1 to 2 minutes. Flip and cook 2 to 5 minutes more – whatever your preference. Transfer eggs to a plate.

FOR BABY: DECONSTRUCTED
Cut omelette into strips, serve with strips of bread (spread with avocado if available) and small mound of shredded cheese

FOR KID: LOADED GRILLED CHEESE
Butter one side of two slices of bread. Heat a skillet over medium heat. Lay one bread slice in the hot skillet, butter-side down. Quickly layer cheese, bread-sized piece of omelette, avocado (if available), and remaining bread slice, butter-side up. Carefully flip to grill other side until golden brown.

FOR ADULTS: KIDS’ LEFTOVERS OR EGG SANDWICH/WRAP WITH A KICK: Layer omelette onto bread/tortilla with cheese, spinach (+ avocado, tomato, hit of Sriracha if available). Wrap or eat open-faced depending on bread.
